Description
This vanilla cake with strawberry filling is soft, moist, and bursting with fruity flavor. A perfect bake for birthdays, brunches, or cozy weekends at home!
Ingredients
For the Vanilla Cake:
- 2½ cups all-purpose flour
- 2½ tsp baking powder
- ½ tsp salt
- 1 cup unsalted butter, softened
- 1¾ cups granulated sugar
- 4 large eggs
- 1 tbsp vanilla extract
- 1 cup whole milk (room temperature)
For the Strawberry Filling:
- 2 cups fresh strawberries, hulled and diced
- ⅓ cup granulated sugar
- 1 tbsp lemon juice
- 1 tbsp cornstarch + 1 tbsp water (mixed)
Optional Whipped Cream Frosting:
- 1½ cups heavy cream
- ¼ cup powdered sugar
- 1 tsp vanilla extract
Instructions
Make the Filling:
Cook strawberries, sugar, and lemon juice in a saucepan over medium heat. Once softened, stir in the cornstarch mixture. Simmer until thick, then cool completely.Prepare the Cake Batter:
Preheat oven to 350°F. Grease two 8-inch round pans.
Mix flour, baking powder, and salt. In a separate bowl, cream butter and sugar until fluffy. Add eggs one at a time, then vanilla. Alternate adding dry ingredients and milk.Bake:
Divide batter into pans and bake for 25–30 minutes. Let cool completely before assembling.Assemble:
Spread strawberry filling between layers. Frost if desired.
Notes
- Want to switch it up? Add lemon zest to the batter or use raspberry filling.
