Description

For the Vanilla Cake:

  • 2½ cups all-purpose flour
  • 2½ tsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter, softened
  • 1¾ cups granulated sugar
  • 4 large eggs
  • 1 tbsp vanilla extract
  • 1 cup whole milk (room temperature)

For the Strawberry Filling:

  • 2 cups fresh strawberries, hulled and diced
  • ⅓ cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch + 1 tbsp water (mixed)

Optional Whipped Cream Frosting:

  • 1½ cups heavy cream
  • ¼ cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  • Make the Filling:
    Cook strawberries, sugar, and lemon juice in a saucepan over medium heat. Once softened, stir in the cornstarch mixture. Simmer until thick, then cool completely.

  • Prepare the Cake Batter:
    Preheat oven to 350°F. Grease two 8-inch round pans.
    Mix flour, baking powder, and salt. In a separate bowl, cream butter and sugar until fluffy. Add eggs one at a time, then vanilla. Alternate adding dry ingredients and milk.

  • Bake:
    Divide batter into pans and bake for 25–30 minutes. Let cool completely before assembling.

  • Assemble:
    Spread strawberry filling between layers. Frost if desired.

Notes

  • Want to switch it up? Add lemon zest to the batter or use raspberry filling.
  • Store leftovers in the fridge for up to 3 days.
