Description

This Sicilian Salmon Risotto is a creamy, rich, and flavorful Italian dish featuring perfectly seared salmon, Arborio rice, and Parmesan cheese. Infused with white wine, garlic, and fresh herbs, it’s a restaurant-quality meal you can easily make at home!


Ingredients

For the Salmon:
  • 2 salmon fillets (6 oz each)
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 2 cloves garlic, minced
  • Zest of 1 lemon
  • Salt & black pepper to taste
For the Risotto:
  • 1 cup Arborio rice
  • 2 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • ½ cup dry white wine
  • 4 cups warm chicken or vegetable broth
  • ½ cup grated Parmesan cheese
  • 1 tbsp unsalted butter
  • 1 tsp fresh thyme
  • ½ tsp red pepper flakes (optional)
  • Salt & black pepper to taste
For Garnishing:
  • Fresh parsley, chopped
  • Extra Parmesan for serving
  • Lemon wedges

Instructions

  • Sear the Salmon: Season the salmon with salt, pepper, and lemon zest. Cook in olive oil and butter over medium heat for 4 minutes per side. Remove and set aside.
  • Prepare the Risotto: Sauté onion in olive oil until soft, then add garlic and Arborio rice. Toast for 1-2 minutes.
  • Deglaze with Wine: Add white wine and cook until absorbed.
  • Cook the Risotto: Gradually add warm broth, stirring constantly, until creamy (about 20 minutes).
  • Finish the Risotto: Stir in Parmesan, butter, thyme, red pepper flakes, salt, and pepper. Gently fold in flaked salmon.
  • Serve & Enjoy: Plate the Sicilian Salmon Risotto, garnish with parsley, extra Parmesan, and a squeeze of lemon.
