- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup diced green chilies
- 1 large tomato, diced (or ½ cup canned tomatoes)
- 1 medium potato, diced
- 1 tsp cumin
- ½ tsp oregano
- ½ tsp paprika
- Salt and pepper to taste
- ½ cup beef broth
- 1 tbsp oil
Instructions
- Heat oil in a pan over medium heat. Sauté onions until soft, then add garlic.
- Add ground beef and cook until browned. Drain excess grease if needed.
- Stir in green chilies, tomatoes, potatoes, and spices. Mix well.
- Pour in beef broth and let simmer for 15-20 minutes until potatoes are tender.
