Ingredients

  • 1 ¼ cups all-purpose flour
  • ¼ cup unsweetened cocoa powder
  • ¼ cup granulated sugar
  • ½ tsp salt
  • ½ cup (1 stick) unsalted butter, cold and cubed
  • 34 tbsp ice water
  • Optional: ½ tsp vanilla extract

Instructions

  • In a bowl, whisk together flour, cocoa, sugar, and salt.
  • Cut in cold butter until the mix resembles coarse crumbs.
  • Gradually add ice water until dough comes together.
  • Form into a disc, wrap, and chill for 30+ minutes.
  • Roll out and press into a pie dish.
  • For no-bake fillings, par-bake at 375°F for 20 mins.

Notes

For deeper flavor, add a pinch of espresso powder or orange zest. Always chill your dough—it makes all the flaky difference!
